Cut the squash in half, scoop out the seeds and fibers and place cut side up in a shallow baking dish, cover tightly with foil and bake until tender, 45-50 min. Set aside and cool.Meanwhile, in a large saucepan, heat oil over medium heat, add onion and cook, stirring occasionally, until golden brown, 8-10 min.Add apples, bouillon, ginger, nutmeg, and 4 cups of water, bring to ta boil and then reduce heat and simmer until apples are tender, about 10 min.Scoop squash out of shells (should be about 4 cups). Let all ingredients cool.A little at a time, place and process all ingredients(adding the rice milk to the squash to desired consistency) in a food processor until smooth.
