salt and pepper
3 cups low sodium chicken stock
2 bunches kale, ribs removed and sliced into ribbons 2 cups cold water
2 cups ice
1 T sherry vinegar

Here is how you make Kale Apple and Kohlrabi Gazpacho:

Cook onion, kohlrabi and apple in olive oil until it begins to brown and soften. Add seasonings (aleppo pepper is good, salt and pepper). Add chicken stock and boil until kohlrabi is soft. Add the chopped kale and stir until it wilts but not too long, you want it to stay bright green. Add 2 cups of cold water. Blend until nice and smooth. Add two cups of ice to chill further. Add sherry vinegar to taste. Pour into shallow pan and stir to cool.
