Add olive oil to dutch oven. Heat over medium high and add cubed chicken thigh. Cook until well browned. Add onion and ginger, cook about 8-10 minutes until union is translucent. Add garlic and cook 1 minute longer. Add rice and broth. Bring to boil, then cover and reduce heat to simmer. Stir often and if it gets too thick add some water.
