Here is how you make Banana Oatmeal Mini Breakfast Cups:

Preheat oven to 350FSpray mini muffin pan with coking sprayMash bananas in a bowl with a fork or potato masher until smooth.Add oats and flax seed and mix well by hand (with a spoon, not an electric mixer).Drop one measured Tablespoon of mixture into each well in the mini muffin pan.Spray the bottom of the Tablespoon with cooking spray and press down into the middle of each compartment, until the oatmeal mixture rises up the sides forming a cup-like shape. Bake for 8 minutes. Remove from mini muffin pan and invert cups onto a flat sheet pan and bake for an additional 2 minutes. Cool on sheet pan 10 mins before removing to wire rack to cool completely. Store at room temperature, in air tight container or bag, for up to 5 days. Makes 16 mini cups. 8 servings/2 cups each.
