Here is how you make Chicken Ranch Potato Skins:

Preheat oven to 400 degrees.Cut the potatoes (longwise) in half. Take a spoon and carefully remove the middle and leave around a half an inch left of the potato.Spray or lightly butter a cookie sheet.Place the potatos bottom down on the cookie sheet and begin baking at 400 degrees for about 40 minutes or until a frok can easily pierce the potatos flesh.At about 20 minutes until the potatoes are done, begin cooking chicken breasts and when that is done dice the chicken up finely and season with salt and pepper. Put on low heat.If not using bacon bits, cook up bacon and cut up finely.After potatoes are out. Layer each potato with ranch dressing to coat the bottom.
