1 Whole Chicken breast (About 2 cups diced)

Here is how you make Chicken and Broccoli Soup:

~Boil chicken in large pot of water. Reserve 2 cups of stock. ~Dice chicken and set aside.~In large saucepan, saute celery, onion, garlic powder,pepper, parsley and red pepper in the olive oil for about 5 minutes.~Add broth, 3/4 of the broccoli and the carrots.~Cover and simmer for about 5 minutes or until tender.~Puree in blender or food processor.~In same sauce pan melt cheeses with milk. ~Add puree, remaining broccoli and chicken to cheese and heat through.*Makes about 6 one and a half cup servings.Number of Servings: 6Recipe submitted by SparkPeople user MICHELLEM79.
