Place chicken breast in slow cooker. In medium skillet, saut? onions and carrots with salt and pepper over medium heat until onions are nearly translucent. Add garlic and cook a few minutes longer. Add wine to loosen up cook bits, then dump all of this over the chicken in the slow cooker. Add to this the remaining ingredients. Cover and cook on low for 6-7 hours or high for 3 hours.
