In a large skillet, heat EVOO, over medium heat. Add ground meat and cook, stirring, until browned, about 10 min. Add the bell pepper, onion, garlic, thyme, cumin, and corriander. cook until tender, about 5 min. Pour in the beer and cook.Preheat the broiler. Arrange the chips on an ovenproof platter.
