Growing up in Brooklyn, the best meals were those made by my Nana Marge. She was born of Irish parents, married an Italian, and her meals became the standard by which I have since compared all Italian fare. This updated low-fat version of Nana Marge's Pasta Fagioli (pasta with beans) is a remarkably delicious dish, and captures all the pleasure of her original recipe. I like to use hot Italian turkey sausage as a replacement for the hot Italian pork sausage that Nana Marge would sometimes add to the mix. The dish can certainly be made without, for those who prefer a meatless dish. And no, there's no missing ingredient...she never used tomatoes. Enjoy!

4 garlic cloves, crushed
1 cup chopped raw onions
1 cup diced raw celery
1 cup diced raw carrots
12 cups chicken broth (or vegetable broth, if you prefer)
1/4 tsp Italian herb seasoning
1 cup white wine (I use Chardonnay)
8 cups (4 - 16 oz cans) of cannellini beans, including liquid in can
4 links Jennie-O hot Italian turkey sausage
12 ounce dry Barilla plus small elbow macaroni



How Do I Make Nana Marge's Pasta Fagioli?

Here is how you make Nana Marge's Pasta Fagioli:

Prepare Barilla elbow macaroni al dente, according to package directions. Once cooked, drain and set aside.Saute sausage in large pan, sprayed with Pam. While sausage is cooking, heat 1T olive oil in stock pot; add garlic and onions and saute until translucent; add celery and carrots, and one cup of white wine; stir in Italian herbs, and braise vegetables until liquid is practically evaporated. Once cooked thoroughly, dice sausage into small bite-size pieces, and add 1/4 cup of water to pan to loosen drippings. Add the chicken broth, beans (including liquid from cans), sausage and pan drippings to stock pot, with all remaining ingredients. Bring pot to a boil and then immediately lower flame to simmer.Simmer soup for 30 minutes to meld flavors. Spoon 1/2 cup cooked elbow macaroni into soup bowls and ladle 2 cups of the hot soup over the macaroni, making certain that one ladle is filled with broth, and the other filled with beans, veggies and bits of sausage.
