Cut the top off the pointy side of the garlic heads so that each clove is cut open (about 1/4 of the garlic) and put aside. Pour about 1/2 tsp. of olive oil over each head and salt them. Wrap each head in aluminum foil and put on a baking sheet. Roast for 30 min. Meanwhile, add chick peas, remaining garlic (skin removed and ends cut off), 1/2 tsp. olive oil, lemon juice and tahini to a food processor. Process until smooth, stopping occasionally to incorporate all of the dip. When garlic is roasted, unwrap and cool for a few minutes. Then squeeze garlic pulp into the dip and add jalapeno pepper, salt and pepper to taste. Blend until smooth and all ingredients are incorporated. Chill 1-2 hours to let flavors meld.Makes approx. 4 cups of dip.
