Combine vinegar and water and stir into skillet until smooth adding more water if needed. Cook until thickened like custard/pudding. Remove from heat to cool slightly. Mix egg and egg yolk and stir in 2 T hot custard dressing to temper eggs, add egg mixture back into pan and stir constantly for about 3 minutes. Remove from heat and add mayo and butter. Let cool slightly. Pour over salad and toss well.
