A simple summer (or anytime) main salad similar to a Waldorf but with a super light dressing. We use orange flavored cranberries from Trader Joe's but currants work well, too. Heat over medium until sugar is dissolved and almonds are coated. Transfer to a piece of aluminum foil to cool. *Warning: This goes quickly- watch for burning*Salad dressing:Combine the 1 tsp of sugar, parsley, rice wine vinegar, and olive oil in a shaker container. Season with salt and pepper to taste. Set aside.Salad:Combine all ingredients in a large bowl and toss to combine. Break almonds into pieces and add to bowl. Shake dressing, add to salad, and toss to coat.
