This is how I made this salad originally, but now I put a whole cup of the mojito mix and no pineapple juice. If you aren't crazy about the mint and lime flavor of the mix, use only pineapple juice. It doesn't change the nutritional info much at all. It is also better if it is allowed to chill overnight so the fruit absorbs the sauce. Oh, and I also add some finely chopped fresh mint leaves as well. I just estimated the servings on this one. I used a 32 cup bowl and it was almost full, so am confident 28 1 cup servings is about what you'll get.

The ingredients for Mojito Fruit Salad are:

3 large oranges, sectioned and sliced in thirds
3 medium sized apples, cored and cut into small chunks
1 pint strawberries, hulled and quartered
2 cups red seedless grapes (cut each grape in half)
1 can pineapple slices, drained & cut each ring into 8ths (you could just use chunked pineapple)
finely chopped mint leaves (optional, and to taste)

Sauce:
1/2 c pineapple juice saved from can
1/2 c Freshies Island Mint Mojito cocktail mix (or any mojito mix)
1 can frozen orange juice

Here is how you make Mojito Fruit Salad:

Cut all fruit and put in large bowl. Add mint (if desired). Toss together. Be sure to save 1/2 cup of the juice when draining the pineapple.To make "dressing," put frozen orange juice concentrate in blender - do NOT add any water! Add mojito mix and pineapple juice. Blend until o.j. is no longer frozen and is mixed well with liquid.
