Here is how you make Garden Salad:

Cut the cherry tomatoes in half. Dice the cucumber- I like a telegraph cucumber. Cut the lettuce into thin slices, about 5mm thick... I think of this as 70's style lettuce that my Aunt always serves. Cut the spring onions into rings the same width as the lettuce.In a large bowl add the lemon juice and olive oil. I use a really good organic olive oil made locally, but any will do. You can add a little salt and pepper at this stage. Toss all the vegetables into the liquid and serve.For a little variety, sometimes I add half a diced avocado, or 1/4 cup of cashew nuts, or 1/2 cup of seedless grapes, or 1/4 cup of diced feta cheese.
