1 large yellow pepper -- roasted on grill
1/4 c. balsamic vinegar
2 tbsp olive oil
1 tsp salt
1/8 tsp pepper
1-2 packets splenda
2 tbsp basil (or several large leaves slivered)

Quarter peppers and grill. Set aside to cool.Cut mozzarella and tomatoes into bite sized cubes. Do the same with the peppers when they are cooled enough to handle. In a bowl mix the oil, vinegar and spices. Add the veggies and cheese and mix thoroughly.
