Here is how you make Salsa Eggs - Hard Boiled:

Boil eggs until "hard boiled". Cool. Peel shells. Cut eggs in half. Scoop out hard boiled yolks. For a more healthy snack, discard 1/2 of the yolks. Mash remaining yolks into small chunks. Add 1/4 cup salsa to egg yolks and stir to combine. Add optional more salsa until it reaches the desired consistency (meatier and juicy or I personally like them not so "full"). Refrigerate - I've noticed that they will keep in the fridge in an air-tight container for about 3-4 days. After that, they get a bit "interesting" :) Enjoy.
