In a medium sized sauce pan, heat the butter or margarine with the oil, add the onion and carrot, and saute the vegetables over moderate heat, stirring them for several minutes or until the onion is soft. add the curry powder, and cook the veggies for 30 seconds more. Add the broth and apples, bring the soup to a boil, reduce the heat, cover the pan and simmer the soup for 15 minutes or until the apples are tender. Let the soup cool for about 30 minutes. Add the milk and avocado to the soup and puree the mixture in batches in blender or food processor. Season the soup with salt and pepper.
