3 Tablespoons olive oil
1 1/2 cup chopped onions
3 cloves garlic, chopped
3 cups zuchchini
3 cup yellow or summer squash
or 3 cup frozen mixed vegetables
3 cups diced cooked chicken or (3) 5 oz cans chicken or turkey,
2 cans (14 oz) diced tomatoes
3 cans (14 0z) seasoned chicken broth
6 cups fresh baby spinach or 3 cup frozen chopped spinach
seasoning basil, chili powder or seasoning of your choice.

Here is how you make Protein Power Soup:

In a large sauce pan over medium heat, cook onions and garlic until transslucent and becoming golden. Raise heat to high, and add both types of Squash. Season with basil and chili powder to your taste. Cook until tender then add chicken tomatoes and chicken broth, bring to a boil, reduce heat and simmer 10 minutes.
