4 c chicken broth
1 lemon grass stalk cut in 1 inch pieces
4 kaffir lime leaves, or lime zest
1, 3 inch peice of ginger rooot, thinly sliced
1, 8 oz can straw mushrooms (I am using fresh since my store doesn't carry these)
4 small thai chilies (optional)
4 T fish sauce
2 T splenda
1, 14 oz can lite coconut milk
1/4 c fresh squeezed lime juice
1/4 c fresh cilantro



How Do I Make Coconut Soup?

Here is how you make Coconut Soup:

in a soup pot, combine and bring to boil chicken broth, lemon grass, lime leaves (or zest) and ginger. Lower heat and simmer for 10 minutes to infuse the broth with flavor. Strain the broth and discard the aromatics, return broth to bowl. Add chicken, mushrooms, chilies, fish sauce, sugar, coconut milk, lime juice.
