3 cups cannellini beans
6 c. vegetable broth
1 Tbsp. Herbamare salt

chop the white portions of two fresh leeks. After snapping the tough ends off of the asparagus, chop into 2 inch pieces. Sautee' the leeks and asparagus in 1 Tbsp. of olive oil in a soup pot. Once the leeks are translucent, add the rest of the ingredients and cook on medium heat for 45 - 60 minutes, until the asparagus is tender. Puree in batches in a Vitamix blender or food processor.
