1 slice of bacon, cut up
1 garlic clove, sliced
1 half small onion, sliced or cubed *could use shallots*
1 tsp. ginger
1 basil leaf (or 1 tsp. dry basil)
1 can chicken broth, fat free/low sodium
1 TB Soy Sauce
2 C Edamame
1 tsp. Wasabi
2-3 TB Reduced Fat Sour Cream
Sriracha to tast


How Do I Make Edamame Soup?

Here is how you make Edamame Soup:

Cook the bacon until it is just about done. Add the garlic and onion until they are slightly soft. Add the ginger and cook it for just a minute or two. Add the edamame, chicken broth, basil leaf and soy sauce. Cook for about 20 minutes, or until edamame is soft. Put the mixture in a blender with the Wasabi. Puree until smooth (mixture will still have some texture). Put the mixture back into your pan and add the Half & Half, heat until warm. Serve with a dollop of sour cream and some sriracha if you like a little heat.I didn't measure out the servings, I eye-balled them. My 15 month old loved this, my 9 year old...not so much.
