A super low fat, high fiber soup that's very filling! The first time I made it I put 2 cups of rice and it was VERY thick, so I reduced the rice to 1 cup instead. If you like your soup with very little liquid, use 2 cups rice; it adds 10 calories or so per cup. VEGETARIAN OPTION: substitute vegetable broth for beef broth, and leave out the beef (it's only there to appease my husband anyway! lol)
