2 Tblsp Onions, raw chopped
2 cups Chicken stock, home-prepared (can use Shrimp stock or beef stock so you control the sodium.)
4 cups Canned Tomatoes (I use home canned so there isn't as much salt as from the grocery store but have figured out how to enter into the food system yet at sparkpeople to get an accurate nutritional count)
2 cups Water, tap
4 tsps Penzey's - Ancho Chile Pepper Ground (1/4 tsp serving)
4 tsps Penzey's - Cajun Seasoning (1/4 tsp serving)
2 1/2 cups Potato, raw
481 grams fresh zuchini chopped (or about 2.5 cups)
15 ounce can Bush's, Black Beans
18 olives cut in quarters Lindsay - Black Olives Extra Large
10 ounces 93% Lean Ground Beef cooked with below taco seasoning before adding to mixture.
3 Tblsp Penzey's - Bold Taco Seasoning (2 tsp serving)

Makes 16 cups of soup. Saute 2 Tblsp of onion in dutch oven or large kettle.Add2 cups Chicken stock, home-prepared 4 cups Canned Tomatoes 2 cups Water, tap4 tsps Penzey's - Ancho Chile Pepper Ground 4 tsps Penzey's - Cajun Seasoning Once mixture is boiling add in the 2/12 cups of potatoes.Cook until just soft. While this is cooking make your meat mixture.10 ounces 93% Lean Ground Beef cooked with below taco seasoning before adding to mixture.3 Tblsp Penzey's - Bold Taco Seasoning (2 tsp serving)Add in about 1/2 a cup of water and cook for about 7-10 mintues and make sure to break up the ground beef.
