Sautee onions and shallots until tender, add vinegar and wine and let simmer. Put onions into large pot, add all other ingredients (without cheese) and bring to boil then let simmer. Serve into oven safe soup bowls (2cups ea) and place one slice of swiss ontop of each bowl. Set in broiler and broil until melted and slightly browned on edges. Serve hot and enjoy.
