1/2 cup onion, diced
1 Tbsp. garlic, minced
6 cups chicken broth
14 1/2 oz. can diced tomatoes
12 oz. Market Day 9-grain Orzo & Spinach Blend
1/2 cup Parmesan Cheese, shredded (for topping- not included in nutritional info.)

Here is how you make Orzo Blend Minestrone Soup:

In a large heavy pot, over medium heat, add the oil. Add the turkey sausage (if using), onion, and garlic. Saute, stirring frequently, for 4-5 minutes or until the onions are translucent and tender. Add the chicken broth, tomatoes, beans (if using), and 9-grain Orzo Spinach Blend. Bring to a boil, reduce heat and simmer, stirring occasionally, for 15-20 minutes. Season to taste with salt and pepper. Garnish each serving with 1 Tbsp.
