Add remaining ingredients, and bring to low boil, cooking for 40 minutes, or until potatoes are soft.Puree approximately half of the soup (or all of it, if you prefer the non-chunky version) in blender, and return to pot.Makes about 8 1 cup servings.I usually make a double recipe, and use the extra as a base for various other soups, adding additional veggies such as carrots, bell peppers, spinach, corn, and/or mushrooms.
