1.25 c. onion - chopped
2 cloves garlic - chopped
4 cups beef broth (can use chicken or veg broth)
2 cups water
1.25 c. chopped carrots
1 large potato diced
1.25 c. chopped celery
.5 tsp black pepper
.5 tsp salt
1 12oz can fat free evaporated milk
.5 c. lowfat colby cheese (or your favorite mild cheese)

Here is how you make Mashed Potato soup:

melt butter in large pot on stove. Add onion and saute until soft. Add garlic and saute until fragrant. Add broth, water, veggies and seasonings. Simmer until veggies are soft. Transfer to slow cooker (or continue to simmer on low) until ready to serve. In last half hour, add evap milk and cheese. (I used a hand blender to blend everything up before adding the milk and cheese for a smooth soup) Makes 14 - 1 cup servings but the low calories make it easy to do 1.5 or even 2 cups for dinner.Number of Servings: 14Recipe submitted by SparkPeople user MELRITT.
