What Are The Ingredients For Sneaky Potato Soup Recipe?

The ingredients for Sneaky Potato Soup are:

5 Pounds of red potatoes, rinsed and cut into bite sized pieces
4 strips of bacon, cooked and chopped up
2 cups sweet corn
1 cup dry quinoa, rinsed and drained
1 cup chopped carrots
2 cups chopped squash
1/2 avocado
2 cups mixed salad greens (or any type of greens)
4 Tbsp ground flax seed
3-4 cups of milk
1 stick of butter
Salt and Pepper to taste
Enough water to cover potatoes for cooking



How Do I Make Sneaky Potato Soup?

Here is how you make Sneaky Potato Soup:

Put potatoes in a large pot and cover with water. Heat to boiling and boil for about 10 or so minutes. You don't want the potatoes to get completely done just yet. Reduce heat to get a gentle boil. Meanwhile, In a saute pan, add carrots, squash, and salad greens and saute over medium heat until just tender and the greens have wilted.Once tender, put in blender with avocado and ground flax seed. Add a ladle full of potatoes and potato water. Blend until pureed smooth. You may need to add more potato water to get it smooth.Add milk to potatoes and let it return to a gentle boil. Add quinoa and corn.Add pureed veggie mix to soup and stir it in completely (In addition to sneaking veggies in to the soup, it helps to thicken it up).Reduce to simmer.Add butter. You can drop a whole stick in or cut it in to pieces. As long as it melts, it doesn't matter. Continue cooking til potatoes are fork tender, but not falling apart, and quinoa is done. Add salt and pepper to taste. Add in bacon. Serve. Serving Size:?Makes 12+ bowl fulls (I didn't actually measure.)
