6 cloves garlic, finely minced
2 bay leaves
2 t. curry powder
1/2 t. turmeric
dash nutmeg
1 15 oz can chopped tomatoes (I used salt-free)
1 cup green lentils, rinsed
1.5 T Better than Bouillion base - vegetable
1 large waxy potatoes, scrubbed & diced
1 small head cauliflower, cut into small florets
6 cups spinach, chopped
2 T minced cilantro
1 cup chopped fresh mushrooms
Zest and juice of one large lemon
Salt and freshly ground pepper to taste

Here is how you make Lentil, Cauliflower, Potato, and Spinach Soup:

1 Place onions in a large pot and saute over med heat for 10 min. Add water 1 -2 T at a time to prevent from sticking to the pot. (I sprayed first with oil) Add garlic and cook 1 minute. Add bay leaves, curry, turmeric, & nutmeg and cook 1 min. Stir in tomatoes & cook 3 min. Add lentils and 7 c. water & bouillion base and bring to a boil over high heat. Reduce heat to low-med and cook, covered for 30 min. Add potatoes & cauliflower & cook 15-20 min. more. 2. Stir in spinach, cilantro, mushrooms, & lemon juice and zest.
