5 small carrots diced
2tsp margarine/butter
2 red chillies, de-seeded and chopped
2 tbsp Sour cream
2 stock cubes made into 900ml hot stock

Here is how you make Chilli Butternut Squash Soup:

Makes 5 servingsPlace butternut squash on a try and place in oven at 200C (400F) for 30 mins, turning once halfway.Whilst the butternut squash is in the oven, turn the hob on to a low heat and place the onions, chillies, carrots and butter in a pan and cover with lid for 20-30mins stirring occasionaly.Once both are cooked, add the butternut squash, hot stock and sour cream to the pot and then either hand blend or blend in batches to a consistency you like.
