1 cup uncooked brown rice
3 (13.5 fl oz) cans of lite coconut milk

Here is how you make Thai Seafood Soup:

Heat the oil in a large saucepan. Fry the onion. Add garlic paste, ginger paste, cilantro paste, lemon grass paste, and chilli paste. Add uncoooked brown rice and stir to incorporate ingredients. Add the fish stock and water, bring to the boil. Cover and reduce to a simmer and cook for 45 minutes. Add the soy sauce, Thai fish sauce, and sugar. Then add the salmon and shrimp and poach until cooked. Add the coconut milk and simmer for two minutes.
