Here is how you make Chunky Tomato Soup:

Saute veggies in oil until crisp tender. I ran them through a light chop in the blender, then returned them to the pot.To the veggies, add all remaining ingredients EXCEPT milk (if you don't use milk, increase water by 1 cup).Heat over medium heat for 20 minutes, or until soup comes to a quiet boil. Boil 1 minute, or until your veggies are the consistency you like. Lower the heat and add 1 c. skim milk (if using). Heat until warm. Serve with your favorite sandwich.
