Makes 3 - 4 medium sized bowls1. Heat the sunflower oil (medium heat) in a pan and then add the chopped onion and chilli, cooking until softened2. Add can of chopped tomatoes and then cook for a few minutes longer, making sure to mix the tomatoes with the onions and chillies3. Add 1.5 litres of chicken or vegetable stock and leave to simmer for 10 minutes4. For a smooth consistency, blend the soup5.
