How Do I Make Vegan Onion Soup?

Here is how you make Vegan Onion Soup:

Peel and slice onions into rounds. Melt the Earth Balance in a stock pot. Add the onions and cook on medium heat for several minutes. Add the salt, dry mustard and thyme. Stir well. Cover and reduce heat to low. Let the onions simmer for 40 - 50 minutes. After this time the onions will be simmering beautifully in their own sweet juice. Add the water, boullion, tamari and balsamic vinegar. Stir and simmer for about 10 minutes more.
