1 cup Barley uncooked(pearled or farro)
1 cup Tomatoes, diced (fresh or from a can, just make sure they are low sodium)
1 medium Onion, diced
3 cloves Garlic, diced
1 medium Carrots, diced small
1 cup White Kidney beans, cooked and rinsed (can use a can)
3/4 cup frozen corn
3/4 cup frozen peas
1 tbsp Olive Oil

Oregano
Parsley
Chili Flakes
salt and pepper


How Do I Make Simple Vegetable and Barley Soup?

Here is how you make Simple Vegetable and Barley Soup:

Cook Barley to package directions. I like it a little under-done so that it can simmer with the soup for a little bit and still retain its bite. Set aside.Heat olive oil in large pot. Add onion, garlic, carrots, chili flakes and salt. All herbs and seasonings are to your own taste, but a little salt while they saute gives the veg a nice base flavour.Saute until the onion begins to soften and brown.Add tomatoes and stock. Add a tbsp of whatever herbs you are using if they are dried.Bring to a Boil and let simmer for 10 minutes or so, until the carrots are cooked to your taste.Add the beans, barley, corn and peas.
