My dad makes a soup kind of like this, but with more vegetables. Don't be fooled, this soup is a MAIN COURSE. I'm entering this one as is because my partner doesn't like a lot of veggies, but I also like to add carrots, zuchini, squash to this in lew of some of the potato. I know that it's high sodium and kind of "carb-y" but it's low fat, not very high in calories, and super delicious. I sometimes leave out the potatos when I use pasta or pasta when I use potatos...making it even lower calorie. it's so easy, that you can pretty much play around with it any way you like..sometimes I make it thick like a stew, sometimes I add more liquid so that it's very soupy and comforting and delicious... just make sure to adjust your nutrition info to suite your changes.

3 small idaho potatos, skin on
1 large turnip
3/4 head of cabbage
7 cups spicy V8 (you can use low sodium if you're watching your sodium intake, or plain V8 or tomato juice if you like less spice/heat
4 cups chicken broth (low fat, low sodium optional etc...)
salt and black pepper to taste
4 cloves garlic smashed
2 bay leaves
1/2 shallot
3 tsp. olive oil
1 tsp worceteshire (don't know how to spell that)
1 tsp soy sauce
2-3 cups whole wheat pasta

Here is how you make Vegetable soup, hearty and spicy:

1) Chop your shallot as finely as you like and cube your potatos. leave the skin on. 2)In a large soup pot, place your 3 tsp of olive oil and sautee your potatos and shallots for a bit... not to too brown, just until the color begins to change (they get a little yellow) and the shallot is clear... (I also salt and pepper for the first time here)3)Then add your V8 and your Chicken broth and drop in your turnip (chopped). 4)boil hard for about 10 min and add your cabbage, bay leaves, soy, worcesteshire sauce, garlic (I just smash the cloves with the knife and drop them in for flavor. You can either leave them in or fish them out at the end.. I leave them, cause I like to eat'em) 5)then let the whole mix simmer for about 30-40min (I don't worry too much about the veggies getting soft, because I like them that way, However, if you use a soft veggie like zuchini, you may want to consider adding it later just before/when you add the pasta)6) The longer it simmers the better the taste, and the softer your turnips and potatos will be. 7)When it's nearly done, add your whole wheat pasta (elbows, rotini, or penne are best) and cook until the pasta is to your liking (note, it will get pretty soft in the leftovers even if you leave it pretty firm to begin with)... 8) at this point I check the seasoning and salt and pepper to taste IF it needs any.9)Then fish out the bay leaves (if you can find them) and serve hot.**I love this recipe because it is SO flexible and easy... kind of a set it and forget it deal.... that said, if you make your own chicken broth or don't buy a low fat variety...You should stick around during the first phase (the hard boil) and skim off anything that rises to the surface... you don't have to, but it's healthier and I think it makes a better soup.
