Kikkoman Lite Soy Sauce, 2 tbsp
Brown Sugar, 1 tsp packed
Corn Starch, 1 tsp
Garlic, 1 clove minced
Nakano Rice Vinegar, 1.5 tsp

Coconut Oil, 2 tsp for the pan

8 cups broccoli
1 can shiitake mushrooms, 113 grams

Here is how you make Teriyaki Chicken with Broccoli and Carrots:

1. Cut chicken breast into small pieces and place into a bowl. Toss in all the marinade ingredients and coat evenly. Cover and refrigerate for at least 30 minutes. 2. Prep vegetables by cutting onion into bite sized pieces; cut broccoli heads into florets; peel and slice carrots. Set aside in a bowl. If using fresh mushrooms, add them to the bowl as well, however I use canned so they don't get added until the end.3. Heat large pan (that you have a lid to) and coat with 2 tsp coconut oil (use any cooking oil you like). Dump all contents from your chicken bowl with marinade into the pan. Cook the chicken just until it starts to brown. You want it nearly fully cooked before you add in your vegetables, especially if you like your veggies more crisp.4. Add all of your vegetables to the pan along with 1/2 cup warm water. Stir everything together, sprinkle 1/2 tsp salt and 1/2 tsp pepper over the top, then cover the pan with the lid. 5. Allow the vegetables to steam until they are almost as tender as you like. I like softer veggies, so I allow them to steam for about 15 minutes. 6. Remove the lid, stir, then add 4-5 T of you favorite bottled teriyaki sauce, or you can make your own simple sauce with more soy sauce, brown sugar, garlic, and sesame seeds. Add a splash of water if it's too dry. If you want to thicken the sauce, add a mixture of cornstarch and cold water and allow to cook for a minute or two. Serve alone or with a side of brown rice.
