3 T. Canola Oil
2 t. Thai Red Curry Paste
2 skinless/boneless chicken breasts/sliced crosswise medium
1 t. Asian Fish Sauce
2 Cups light Coconut Milk
1/2 Cup low sodium Chicken Broth
2 Cups Sliced Button Mushrooms
3 Cups trimmed Snow Peas
1/2 Lime
2 Cups prepared Brown Rice


How Do I Make Red Curry Chicken and Snow Peas?

Here is how you make Red Curry Chicken and Snow Peas:

Heat oil in a wok or large frying pan over med-hi heat. Add Curry paste and stir fry for about 45 seconds. Add Chicken and stir fry until just opaque, 3-4 minutes. Remove chicken to bowl. Add mushrooms to pan and saute for 5-7 minutes until they release their liquid. Remove to the chicken bowl. Add fish sauce and a little of the coconut milk and stir to scrape up browned bits. Add remaining coconut milk, broth, and cook stirring, until liquid is reduced to 1 1/2 cups abut 10-12 minutes. Squeeze 1/2 lime into sauce. Add snow peas and stir for 1 minute. Add chicken and mushrooms back to pan and stir for 2 minutes until heated through. Serve on Rice and sprinkle with chopped cilantro.
