Cut the scallions, mushrooms, ginger, onions, and chicken if necessary. Also, prepare your cornstarch mixture ahead of time (in a separate bowl, put a tablespoon of cornstarch in half a cup of water and set aside).Heat up a large pan or wok on medium-high and add the olive oil.
