Heat a wok or large pan over medium heat. Add olive oil, garlic and spring onions. Stir and cook until softened, 2-3 minutes (do not brown garlic). In a bowl, combine eggs, water and salt, beat until combined (chop sticks work well for this). Add eggs to wok, stir as eggs cook on bottom to avoid burning. When eggs become almost dry, add tomatoes and chilli sauce. Stir another minute to warm tomatoes through. Garnish with a bit of spring onion.
