Cook white rice and cool (do this the previous day if possible).Get all of your ingredients ready before commencing. Heat the peanut oil in a wok until smoking. Add the eggs and move them around immediately (ie scrambling, rather than frying them like an omelette). When almost set, remove from the wok and set aside.Add the Chinese sausage and stir fry until the fat renders, being careful not to burn it. Add the red capsicum and stirfry. Add the rice and stir fry until the rice is well heated through. Add the bean sprouts and continue to stirfry.Roughly chop the egg with whatever implement you're using to stirfry, then add to the wok. Mix the egg through thoroughly, add the soy sauce and stirfry again.
