Put 1/2c Quinoa and 1c water in covered pot, turn down heat when it starts boiling (16min cook time).Cook chicken (I do about 8-9oz cooked) until it is almost cooked then add 2 medium carrots, 2 slices of onion and 1/2c frozen peas to skillet. Add Red Boat fish Sauce, coconut aminos and microplane fresh ginger into the mix.
