This award winning salad was originally created by a great vegetarian cook, Usha Meister. I've tweaked it a little for my own tastes, by adding more dried fruit and changing up the vegetables, and using quinoa instead of rice.

Salad ingredients:
2 cups finely chopped celery
1 cup finely diced green pepper
1 cup finely diced red pepper
1/2 cup finely chopped green onions
1 cup uncooked quinoa.

To be added last:
2 cups finely sliced radishes, prepared as per first step below
2 cups finely chopped cucumber
1/2 cup finely chopped parsley, or to taste
1/2 cup raisins,
1/2 cup dried cranberries
1/2 cup dried cherries
8 oz grape tomatoes cut in half

Garnish:
2 tbsp. sunflower seeds (optional)
2 tbsp. flax seeds (optional)
Lettuce leaves, 6 large (optional)

Dressing:
1 cup pomegranate juice
1/2 cup balsamic vinegar
4 tbsp liquid honey


How Do I Make Andalusian Salad?

Here is how you make Andalusian Salad:

1. To the sliced radish, add one tablespoon lemon juice (this turns the radish to a beautiful baby pink colour) and a pinch of salt. Mix well to coat all over. Transfer to an airtight container and refrigerate. 2. Bring 2 cups of water to a boil (5 minutes in microwave), add quinoa and cook covered on high for 5 minutes. Stir, and cook covered again for another 5 minutes. Cool and refrigerate.3. In a large bowl, combine the chopped ingredients and refrigerate.4. Just before serving: Add the prepared radish, cucumbers, parsley, raisins, dried cranberries and cherries to the salad ingredients. Add dressing and adjust seasoning to taste. Toss gently to combine the salad. 5. At the very end, add the flax seeds and sunflower seeds (this helps retain their crunchiness) 6. Arrange prepared salad on a bed of lettuce or serve as is.
