In small bowl, stir in soy sauce, rice wine vinegar honey, sesame oil. Divide into equal parts. One for tuna one for dipping sauce.Spread sesame seeds out on a plate. Coat the tuna steaks with the remaining soy sauce mixture, then press into the sesame seeds to coat.Heat olive oil in a cast iron skillet until very hot. Place steaks in pan and sear for about 30 seconds on each side (or longer if you dont like your tuna too rare).
