1 medium spaghetti squash
1/4 cup low sodium soy sauce
3 cloves garlic, minced
1 tbsp. brown sugar, packed
2 tsp ground ginger
1/4 tsp pepper (optional)
1 tbsp. olive oil
1 white onion, diced
2 cups cole slaw mix (shredded cabbage and carrots)

Here is how you make Chow Mein Spaghetti Squash:

Cut a spaghetti squash in half, length wise and scoop out seeds. Lay skin side up in a 9x13 dish and pour 1/2" of water in the bottom. Bake @ 400 degrees for 30-35 minutes. Once done, scoop out the flesh with a fork so it breaks apart into strings and set aside.In a small bowl, whisk together soy sauce, garlic, brown sugar, ginger and pepper. set aside.Heat olive oil in a large skillet over medium heat. Add onion, (mushrooms and chicken) and cook until done.
