Chop scallions separating the white from the green. Chop the mint leaves and combine with the greens of the scallion. Chop the garlic and combine with the whites of the oven.

Heat coconut oil over medium in large pan. When oil is hot add scallion whites/garlic mixture. Saute' until aromatic. Add ground turkey, season with Splenda, salt & pepper. Cook until brown. When browned, add fish sauce and lime juice. Toss together. Turn off heat and add scallion greens/mint mixture. Toss together. Cover pan with lid and let sit for 5 minutes to let flavors blend.
