1 tbsp Cornstarch mixed with equal part water
1 tbsp Ginger minced
3 Cloves Garlic minced

Mince the pork tenderloin to simulate ground pork (or use lean ground pork). Mix with sherry (shao hsing) and corn starch and set aside.In a separate small bowl, combine black beans, sriracha chili sauce, sichuan peppers, soy sauce, garlic, and ginger; set aside.Heat a large skillet over medium heat (wok). Cook pork until evenly browned. Stir in black bean mixture, tofu, and peas. Pour in chicken broth and bring to a boil.
