The ingredients for Fiesta Bake are:

1 pound lean ground beef
1 clove garlic, minced
1 onion, diced
1/2 ts. salt
1/4 ts. pepper
1 10 ounce can enchilada sauce
1 8 ounce can tomato sauce
2 15 ounce cans chili beans
1 17 ounce can corn, undrained
1 4 1/4 ounce can chopped olives (optional)
15 corn tortillas, torn into large pieces
1/2 cup finely shredded cheddar cheese

Here is how you make Fiesta Bake:

Brown beef, garlic and onion. Drain off fat. Season with salt and pepper. Add remaining ingredients, except tortillas and cheese. Place 1 cup meat mixture in the bottom of a large casserole dish. Add a layer of tortillas. repleat layers until meat mixture and tortillas are gone, ending with meat mixture. Cover and bake in 350 degree oven for 30 minutes. Sprinkle with cheese and let stand 10 minutes before serving. Serve with light sour cream and lettuce if desired.
