Drain off fat. Season with salt and pepper. Add remaining ingredients, except tortillas and cheese. Place 1 cup meat mixture in the bottom of a large casserole dish. Add a layer of tortillas. repleat layers until meat mixture and tortillas are gone, ending with meat mixture. Cover and bake in 350 degree oven for 30 minutes. Sprinkle with cheese and let stand 10 minutes before serving. Serve with light sour cream and lettuce if desired.
