While oven is preheating, saut? green peppers, mushrooms, and pepperoni in olive oil for about 5 minutes. Add garlic and cook another minute. Add oregano, salt, and pepper. Stir well. In a separate bowl, whisk eggs and water together. Add more salt and pepper. Spray pie pan with cooking spray and add egg mixture to the pan. Top egg mixture with your peppers, mushrooms, garlic, and pepperoni. Slowly mix together then place in oven to bake for 30 minutes or until egg center no longer jiggles.Remove from oven, cover with pasta sauce, and then top with mozzarella cheese. Put back in oven and cook an additional 10 minutes or until cheese is melted and bubbly.
