1 Tb olive oil
1 1/2 lb lean beef stew meat (or steak cut into bite-sized pieces)
1 Tb cumin
1/8 - 1/4 tsp dried cilantro
salt/salt substitue to taste
1 can (15 oz) garbanzo beans/chick peas
1 1/2 c. shredded Mexican cheese blend


How Do I Make Garbanzo Beef?

Here is how you make Garbanzo Beef:

Heat olive oil in a large skillet. Saute beef with cumin, cilantro, and salt. Meanwhile, drain and rinse garbanzo beans, then mash them with a potato masher or in a food processor. When meat nearly cooked through, add mashed beans and blend well. Cood until the meat is done and the mixture is heated through. You may either cover the mixture evenly with the cheese and allow to melt on top, or simply blend the cheese into the mixture.Serve with light sour cream, ripe olives, or other tolerated "Mexican" toppings/condiments.Feel free to adjust spices (more or less) depending on your (or your family's) taste.Makes 6 2/3-3/4 c. servings.Fructose exchange:Each serving contains approximatly 1/3 c. garbanzo beans.Number of Servings: 6Recipe submitted by SparkPeople user AATKINSON13.
